Ingredients: 1 kg of polao rice, 4 tablespoons of ghee, a few cardamom-cinnamon-bay leaves-star spices, 1 tablespoon of ginger paste, 1 teaspoon of garlic paste, 1 teaspoon of whole fenugreek, salt to taste, 3-4 whole green chilies, 7 cups of hot water, a few lemon leaves, 1 tablespoon of beresta.
Method: Heat ghee and fry the chopped onion, fenugreek and garam masala in it for a few minutes. Grind the ginger paste and garlic paste with a little water and add the polao rice. Stir for 2-3 minutes and cover with hot water and salt. After 10 minutes, remove the lid, stir and cover again. When the water dries up, add the whole green chilies and lemon leaves and keep it for a few minutes. Serve with the onion beresta.
